Hello everyone! I hope everyone is staying sane and doing well. I'm keeping myself busy by finding new recipes to make, and I thought I'd share these two recipes that I was successfully able to make (with help). This week has been a trying week. I ran into my door and injured my pinky toe. I cut my pinky while chopping rosemary for the pork chops I was making for dinner. I also busted my lip from dropping my phone on my face. Good news is it's okay because I'm home and have nowhere to go.

The first recipe I wanted to share are these coffee bean cookies! You can watch the YT video here. I modified the recipe a bit because I'm allergic to dairy. I used vegan butter instead so I had to adjust and add about 1/4 cup more flour and sugar for consistency. I didn't have cocoa butter so I melted and used dark chocolate instead. I also would bake it for 8-9 minutes instead of 12-14 minutes as suggested if you're using vegan butter. These coffee bean cookies are perfect to have in the morning with an iced latte.
The second recipe is matcha dalgona, which you've probably seen everywhere. Here's the link to the YT video I followed. This one is dairy-free, but you can find other recipes online if you don't have any allergies :) It tastes like starbucks matcha frap - super sweet. This makes about 4 servings so share with family or roommates!Also, I got a lot of questions about where I got my tortoise spoon. I first came across these spoons when I was at Happy Bones coffee shop in NYC. I've been keeping my eye on them, but they were always sold out. I ordered mine from an Aussie shop called neue blvd, which you can find here. I usually don't like to pay for shipping, but I decided to go for it since it was on sale.
